We are thrilled to announce our participation in the Delicious project, a European Horizon-funded initiative aiming to redefine plant-based dairy. With the global plant-based food market projected to hit €40 billion by 2027, the demand for sustainable, delicious, and nutritious dairy alternatives has never been higher. Yet, challenges persist in replicating the taste, texture, and nutritional value of traditional dairy products. Enter the DELICIOUS project: a collaboration of 17 leading organizations from 9 countries, combining advanced microbial fermentation, bioinformatics, and culinary expertise to overcome these obstacles. The project will focus on creating affordable, safe, and tasty plant-based dairy analogues such as cheese and kefir, while reducing environmental impact by up to 30% compared to conventional dairy processes.
The official kick-off meeting took place at Fundació Alícia in Mont Sant Benet, Barcelona, Spain on the 12th and 13th of December and we were there to bring our expertise in precision fermentation to the table. Moving forward we will be contributing cutting-edge fat solutions designed to replicate the taste and texture of animal fats.
